We start this potato gratin by steeping thyme, bay leaves, and garlic in cream. Then we layer thinly sliced Yukon Goldswith scallions, pour that cream over top and finish the luxurious event with a blanket of Fontina. Viv's daughter says it rivals mac n cheese, so there. Pair it with just about anything in the fridge, except maybe cake. Serves 4. Gluten Free. $25

Yes, I'm THAT chocolate cake — the one Kim made for more than a decade at Chef & the Farmer. At 10 layers, shellacked together with caramel then made complete by a smattering of salty sweet toffee, I have ushered in many a birthday and celebrated a centuries' worth of anniversaries.
